When the weather cools down, nothing hits the spot quite like a creamy, hearty bowl of chowder. It’s thick, cozy, and full of flavor, yet it’s a lighter, plant-based twist on the classic chowder. How to Make Creamy Corn & Golden Potato Chowder

  1. Sauté the aromatics: In a large pot, heat olive oil and sauté onion and garlic until soft and fragrant.
  2. Cook the potatoes: Add diced potatoes, smoked paprika, salt, and pepper, then stir to coat.
  3. Add corn and broth: Stir in the corn kernels and vegetable broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
  4. Blend partially: Use an immersion blender to blend about half of the soup, leaving some chunks for texture.
  5. Add creaminess: Stir in plant-based milk, coconut cream (if using), and nutritional yeast. Adjust seasoning to taste.
  6. Serve: Ladle into bowls and garnish with fresh parsley.

I like mine with a drizzle of olive oil and a slice of warm bread on the side. It makes for the coziest dinner.
