Creamy Sweet Potato & Peanut Soup

There’s something so comforting about a warm bowl of soup on a crisp fall evening, and this creamy sweet potato and peanut soup quickly became one of my favorite fall recipes. It’s rich, naturally creamy, and packed with flavor, making it a perfect healthy fall recipe that’s hearty enough for dinner but light enough for lunch.
The combination of sweet potatoes and peanut butter is a revelation...sweet, savory, and perfectly creamy. Since creating it, I’ve found myself making it every fall, and it’s become a staple when I want something cozy and satisfying without spending hours in the kitchen. And it's perfectly creamy without any dairy needed!
Ingredients You’ll Need
- 2 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1-inch piece fresh ginger, grated
- 2 medium sweet potatoes, peeled and chopped
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1/3 cup natural peanut butter (creamy or crunchy)
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper, optional
- Salt and pepper to taste
- Juice of 1 lime, optional for finishing
Step-by-Step: How to Make Creamy Sweet Potato & Peanut Soup
- Sauté aromatics: Heat olive oil in a medium pot and cook onion, garlic, and ginger until fragrant
- Add sweet potatoes and spices, cook for a few minutes to combine flavors
- Pour in diced tomatoes and vegetable broth, bring to a simmer
- Simmer for 20-25 minutes until sweet potatoes are tender
- Blend until smooth using an immersion blender or in batches in a high-speed blender
- Stir in peanut butter, adjust seasoning with salt, pepper, and cayenne if using
- Finish with lime juice for a touch of brightness, serve warm
Personal tip, I love serving this with a slice of toasted whole-grain bread or a handful of roasted chickpeas for a little crunch and extra protein.
