Fall Quinoa & Apple Stuffed Acorn Squash

Ingredients You’ll Need
- 2 medium acorn squash, halved and seeds removed
- 1 cup cooked quinoa
- 1 apple, peeled, cored, and diced
- 1/4 cup dried cranberries
- 1/4 cup chopped pecans or walnuts
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tbsp maple syrup (optional)
- 1 tbsp olive oil
- Salt and pepper to taste
- Optional: fresh parsley for garnish
Step-by-Step: How to Make Quinoa & Apple Stuffed Acorn Squash
- Preheat oven to 400°F (200°C)
- Prepare the squash, brush cut sides with olive oil, season with salt and pepper, and roast cut-side down for 25-30 minutes until tender
- Prepare the quinoa filling: In a skillet, sauté diced apple with a little olive oil until slightly softened. Stir in cooked quinoa, cranberries, pecans, cinnamon, nutmeg, maple syrup, salt, and pepper
