Step-by-Step: How to Make Creamy Apple & Parsnip Soup

  1. Sauté aromatics: Heat olive oil in a large saucepan, add onion and garlic, and cook until soft
  2. Add parsnips and apples, cook for a few minutes until slightly softened
  3. Pour in vegetable broth and add thyme, cinnamon, salt, and pepper
  4. Simmer for 20-25 minutes until parsnips are tender
  5. Blend until smooth using an immersion blender or transfer in batches to a high-speed blender
  6. Stir in coconut cream if using, adjust seasoning to taste
  7. Serve warm, garnished with a sprinkle of pumpkin seeds or fresh herbs
