Creamy Butternut Squash & Crispy Sage Soup

This creamy butternut squash & sage soup is one of my favorite fall recipes. The combination of roasted squash, garlic, and crispy fried sage leaves creates a comforting flavor that feels both cozy and elegant. Ingredients You’ll Need

How to Make Creamy Butternut Squash & Sage Soup
- Roast the squash: toss cubes in olive oil, salt, and pepper, then roast at 400°F for 25 to 30 minutes until golden and tender
- Sauté the aromatics: in a large pot, cook onion and garlic until soft and fragrant
- Blend the soup: add roasted squash and vegetable broth, then blend until creamy using a high-speed blender or immersion blender
- Add coconut cream: stir in coconut cream for richness
- Fry the sage: heat olive oil in a skillet, fry sage leaves until crispy, and set aside
- Serve: ladle soup into bowls, swirl in extra coconut cream, drizzle with olive oil, and top with crispy sage
