Pumpkin Golden Milk Bread with Coconut Glaze
Molly Moore / 27 August 2025

This Pumpkin Golden Milk Bread is one of my favorite fall recipes because it brings together the comforting flavor of pumpkin with the warming spices of golden milk. Instead of blending the spices fully into the batter, they are gently swirled through, creating a subtle marbling that looks beautiful when sliced and gives you pockets of spiced flavor in every bite. Topped with a light coconut glaze, this feels like a treat but is made with simple, wholesome ingredients that make it a great option for a healthy pumpkin recipe you can enjoy any time of day.
I first came up with this recipe when I wanted a twist on classic pumpkin bread that leaned into wellness and seasonal ingredients. I already loved making golden milk lattes in the evenings during fall, so creating a marbled pumpkin bread with those same healing spices felt like the perfect match.
Why This Pumpkin Golden Milk Bread Is a Healthy Fall Recipe
So many fall recipes lean into heavy butter, sugar, or processed ingredients, but this bread is nourishing and satisfying without being overly indulgent.
- Pumpkin is rich in vitamin A and antioxidants that support eye and skin health.
- Turmeric has natural anti-inflammatory properties, especially when paired with a pinch of black pepper.
- Ginger aids digestion and adds a gentle warmth that pairs beautifully with pumpkin.
- Cinnamon balances blood sugar and adds a naturally sweet flavor.
- Coconut glaze is lighter than frosting but still gives that finishing touch.
- Using whole wheat or oat flour adds fiber, which keeps you fuller longer.
This is the kind of pumpkin recipe that feels cozy, but still lines up with the way I like to eat when I want nourishing comfort food.

Ingredients You’ll Need
- 1 cup pumpkin puree
- 2 eggs or flax eggs (for vegan option)
- 1/3 cup coconut oil, melted
- 1/2 cup maple syrup or honey
- 1 tsp vanilla extract
- 1 1/2 cups whole wheat flour (or a blend of wheat and oat flour)
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 tsp ground cinnamon (divided)
- 1 tsp ground ginger
- 1 tsp turmeric
- Pinch of black pepper
- 1/4 cup unsweetened shredded coconut (optional, for texture)
For the glaze:
- 1/2 cup powdered sugar
- 1–2 tbsp coconut milk
- 1/2 tsp vanilla extract
How to Make Pumpkin Golden Milk Bread with Marbling
- Preheat your oven to 350°F and grease a standard loaf pan.
- In a large bowl, whisk together the pumpkin puree, eggs, coconut oil, maple syrup, and vanilla.
- In another bowl, mix the flour, baking soda, baking powder, salt, and 1 teaspoon of cinnamon. Fold the dry ingredients into the wet until just combined.
- Remove 1 cup of the batter and place it in a separate bowl. Stir in the turmeric, ginger, the remaining 1 teaspoon of cinnamon, and a pinch of black pepper. This will be your spiced swirl.
- Pour half of the plain pumpkin batter into your loaf pan, then spoon in half of the spiced batter. Repeat with the remaining batters. Use a butter knife to gently swirl the two together, creating a marbled effect. Do not overmix.
- Bake for 45–55 minutes, or until a toothpick inserted comes out clean.
- Let the bread cool completely before drizzling with the coconut glaze.
The marbling creates golden streaks of spice throughout the loaf, making it as pretty to look at as it is delicious to eat.

Tips for Success
- For bolder marbling: Drag your knife in figure-eight patterns for a dramatic swirl.
- Make it vegan: Swap eggs for flax eggs and use maple syrup instead of honey.
- Boost the health factor: Add a tablespoon of ground flaxseed or chia seeds to the batter.
- Try muffins instead: Spoon the two batters into muffin cups and swirl before baking for 18–22 minutes.
Final Thoughts
This Pumpkin Golden Milk Bread with marbled spices and a coconut glaze is a gorgeous way to bring together cozy fall flavors and wellness-inspired ingredients. It’s nourishing, flavorful, and makes the perfect healthy fall recipe to bake on crisp mornings.
Once you slice into it and see that golden swirl, you’ll want to bake it again and again.
